Gourmet Sipping Chocolate
With Ice Cream Tapas

Equipment: #30 ice cream scoop, 2 qt. sauce pot, whisk, serving cup, tapas plate
- 3 cups (24 fl. oz.) 2% milk
- 1 cup (8 fl. oz.) heavy cream
- 1 cup (8 fl. oz.) BLUE BUNNY® Chocolate Ice Cream (melted), #19506
- 1/2 cup (4 fl. oz.) water
- 1/3 cup (3 oz.) baker's super fine sugar
- 3/4 cup (6 oz.) bittersweet chocolate, 60% cocoa solids or higher, chopped fine
- 36-#30 scoops (2-3/4 lbs.) BLUE BUNNY® Chocolate Ice Cream, #19506
Scoop three #30 scoops (1-3/16 oz. each) of BLUE BUNNY® Chocolate Ice Cream on frozen tapas plate. Place back in freezer.
In a 2 qt. saucepan combine milk, cream, BLUE BUNNY® Chocolate Ice Cream, water and sugar. Heat on medium heat until boiling has
just begun. Add bittersweet chocolate to sauce pot in three increments while slowly stirring mixture with whisk. Place liquid in a blender
and blend for 1 minute on high setting. Pour chocolate in glass, top with tapas plate and serve immediately.
Makes 12 servings
Variations:
- Use BLUE BUNNY® Cinnamon Ice Cream instead of BLUE BUNNY® Chocolate Ice Cream.
- Add BLUE BUNNY® Wildberry Sorbet to the sipping chocolate to add some fruit notes.
Hints:
- Use more heavy whipping cream and less 2% milk to have a super indulgent sipping chocolate.
- Sipping chocolate can be cooled directly after making and then heated to order.
