Equipment: #8 ice cream scoop, 2 Medium sized metal bowls, whisk, spoon, paper towel
- 4-#8 scoops (1 lb.) Blue Bunny® Just Peachy™ Ice Cream, 832059
- 1/4 cup brown sugar for coating donut holes
- Oil for frying heated to 350°F
Donut Holes (12 donut holes)
- 3/4 cup (6 fl. oz.) milk
- 1 egg
- 1/2 cup (4 fl. oz.) peach puree
- 1/4 cup (2 fl. oz.) melted butter
- 2 cups all purpose flour
- 1 Tbsp. sugar
- 1 Tbsp. baking soda
- 1 tsp. salt
Mix together flour, sugar, and baking soda, set aside. Whisk together milk, egg, peach puree, and melted butter. Add the dry ingredients to the wet ingredients stirring to make a thick batter. Using a spoon, scoop donut batter and lightly drop into oil. Fry for 2-3 minutes or until donuts turn a dark brown color. Remove donuts from fryer using a skimmer and transfer to a sheet pan lined with paper towels. Sprinkle donuts with brown sugar. Place 1-#8 scoop of Blue Bunny Just Peachy™ Ice Cream onto plate and arrange donuts around ice cream. Garnish with complimentary fresh fruit.

- Substitue Blue Bunny Cinnamon Ice Cream for Just Peachy™ Ice Cream.
Hints:
- Ice cream loses flavor and texture if allowed to melt too much.
- For best dipping results when using a 3-gallon tub, begin scooping close to tub wall, cutting about 1/2-inch down.
