Equipment: #8 ice cream scoop, 3” diameter metal cylinder
Lemon Strawberry Cookie Sandwich
- 8 lemon sugar cookies
- 1/2 gallon (2-1/3 lbs.) BLUE BUNNY® Strawberry Ice Cream, #19515
- 1/2 cup (4 oz.) granulated sugar with lemon zest
Spumoni Ice Cream Cookie Sandwich
- 8 triple chocolate pecan cookies
- 1/2 gallon (2-1/3 lbs.) BLUE BUNNY® Spumoni Ice Cream, #19677
- 1/2 cup (4 oz.) chopped salted pecans
Cherry Nut Ice Cream Cookie Sandwich
- 8 white chocolate chip cookies
- 1/2 gallon (2-1/3 lbs.) BLUE BUNNY® Cherry Nut Ice Cream, #19711
- 1/2 cup (4 oz.) chopped toasted almonds
To assemble ice cream cookie sandwiches, place one cookie up side down in a 3" diameter metal cylinder. Place a #8 scoop (4 oz.) of
ice cream on top of cookie. Place another cookie on top of ice cream. Push down the top cookie to make ice cream sandwich and freeze.
When frozen, roll ice cream in toppings and serve immediately.
Makes 12 servings

Hints:
- All desserts can be pre-made and stored in the freezer on sheet pans until ready to serve.
- Freeze the dessert plate before serving to decrease melting of ice cream.
